Proper extraction of the grain’s true flavor requires serious friction. Millstones come in pairs, offering a perfect solution for opening the profound flavor of quality US-grown grain. For this tribute to All Souls Pizza we called upon Riverbend Malt to malt us NC-grown 6-row barley and Turkey Red wheat, and Candler’s Farm & Sparrow to source us top notch unmalted rye and spelt. After a healthy two stage mashing process, we utilized a blend of Chinook and Citra hops through a healthy hop stand, touched with a hint of West Asheville-grown Thai Basil. Add in our two favorite Belgian yeasts and the result is an incredibly effervescent and aromatic ale, tasting of of seasoned herbs, citrus peel and peppercorn.
